Is your honey real?
Why our honey crystallises, and why that is a good sign
Raw honey granulates. It is not spoiling, it has not been sugared, and nothing has gone wrong. Crystallisation is glucose coming out of solution, and it is one of the few visible signs that honey has not been heated and ultra-filtered into permanent clarity.
Honey that stays perfectly liquid for years has usually been processed until it can no longer behave like honey.
To bring it back: stand the jar in warm (not boiling) water for a few minutes. Never microwave it.
How to actually tell if honey is adulterated
You have probably been told to drop honey in water, hold a flame to it, or rub it between your thumbs. We would rather be straight with you: none of those home tests are reliable. Pure honey can fail them, and adulterated honey can pass them.
Adulteration is detected in a laboratory, by measuring C4 sugar content, sucrose, moisture and HMF. That is the only honest answer, and it is why we would rather publish our numbers than sell you a party trick.
What "raw and unfiltered" actually means
Raw means the honey is not pasteurised. It is never heated to the point where its natural enzymes and pollen are destroyed.
Unfiltered means we strain out wax and debris, and stop there. We do not ultra-filter, which strips out the pollen that lets honey be traced back to its floral source in the first place.
Why every batch tastes a little different
Colour, thickness and flavour shift with the season, the rain, and whatever was in bloom when the bees were foraging. A jar of Wild Flower harvested in spring will not match one from autumn.
Perfect consistency across every jar, year after year, is a sign of blending. Variation is a sign of a real harvest.

Yes. Every honey we sell is raw, unfiltered and unpasteurised, exactly as it comes from the hive, with no added sugar, glucose syrup or water. We harvest and pack it ourselves, so there are no middlemen and no chance for it to be cut along the way.
Which honey should I choose - Sidr, Acacia or Wild Flower?
If you like a light, mild honey, start with Acacia. For something dark, rich and full-bodied, Sidr (Bair) is the most prized. Wild Flower sits in between, aromatic and different each season, while Ajwain has a warm, savoury edge. Still unsure? Our starter trio lets you taste three before committing.

How should I store my honey?
Somewhere cool and dry, with the lid closed. Do not refrigerate it, as cold speeds up crystallisation. Always use a dry spoon: water is the one thing that can actually spoil honey.
Does honey expire?
Not in the way most food does. Stored properly and kept dry, honey keeps for years. It may darken or crystallise over time, and neither means it has gone bad.
Can I give honey to a baby?
No. Never give honey to a child under 12 months old. Raw honey can contain spores that a baby's digestive system cannot yet handle (infant botulism). This is true of all honey, ours included. Over the age of one, it is perfectly safe.
